Easy Chicken Drumsticks
Ingredients:
2 ½ - 3 lbs chicken drumsticks (10-12 drumsticks)
1/2 cup soy sauce
2 TBL olive oil
2 TBL ketchup
3/4 cup honey
3-4 garlic cloves, minced
salt and pepper
Directions:
1. Add soy sauce, olive oil, ketchup, honey and garlic to a 1-gallon Ziplock bag. (Make multiple quantities of these bags at the same time if you want to freeze for later.)
2. Seal bag(s) and mash liquid with your hand from outside the bag to combine.
3. Add chicken to bag and seal, removing as much air as possible.
4. Freeze at this point or let marinate for at least 1 hour and up to 48 hours, rotating the bag occasionally.
5. IF FROZEN, thaw on counter for 4-8 hours.
6. When ready to bake, preheat oven to 375°F.
7. Pour bag contents into greased 9”X13” pan.
8. Arrange chicken in one layer and sprinkle with salt and pepper.
9. Bake in preheated oven for 45-60 minutes, without rotating or basting the chicken. This will create a crispy crust on the chicken that is delicious!
SPICE IT UP: Add spice to this dish by including 1-2 TBL of thinly sliced fresh jalapenos rounds to marinade. Place rounds on top of the chicken and bake as instructed above.
