St. Patrick’s Day Corned Beef
Ingredients:
1 package corned beef Brisket ( I like Bill Bailey’s brand, but whatever you can find is great.)
1 yellow onion, halved and sliced in 1/2-1/4” slices
2-4 TBL Dijon mustard
1/4-1/2 cup brown sugar
Directions:
1- Spray bottom of crockpot with olive oil spray. (You’ll thank me when you’re cleaning up later!!) 😁
2- Layer onion on bottom of crockpot. Place contents of corned beef packet on top of onions. Cook in crockpot for 4-6 hours on high or 6-7 hours on low. (times vary by crockpot.)
3- 15 minutes before crockpot cooking is complete, preheat oven to 350°F and cover a baking sheet with parchment paper.
4- Remove meat from crockpot, place on baking sheet covered with parchment paper and spread 2-4 TBL Dijon mustard all around the meat, including the bottom. Then cover with brown sugar on all sides, including bottom. Rotate to make sure fat side is up, then bake in 350°F oven for 20 minutes.
6- Slice and enjoy with rainbow fruit salad, roasted cabbage, smashed potatoes and Irish Soda Bread! Its a Baker Boyd’s twist on tradition. Hope you enjoy!
