Toxic Waste Dump Mac & Cheese

TOXIC WASTE MAC & CHEESE
Ingredients:

3 TBL butter
1/4 cup +1 tsp flour
2 cups warm milk
1 tsp salt
2 oz. shredded cheddar/mozzarella cheese (3/4 cup)
1 cup fresh spinach
2 TBL fresh basil leaves
1 pound pasta, cooked according to package instructions

Directions:
Melt butter in a 2-quart sauce pan over medium heat.
Whisk in flour, stirring constantly for 1-2 minutes, until flour is cooked.
Add the warm milk and whisk constantly until thickened, around 2-4 minutes.
Remove from heat and stir in cheese and salt.
Add fresh spinach and basil leaves and blend with a hand blender or pour mixture into a blender and blend until mixture turns slightly green. (You can add food coloring if a deeper green color is desired.)
Pour cheese sauce over pasta and stir. Enjoy!!
